Evliya Çelebi’s 17th-century Seyahatname mentions Malkara kaşar by name. By 1937, more than 40 kaşar dairies were active in Thrace. Scientific analysis has traced its flavour compounds to the diverse Thracian pasture flora of the Ergene basin. Registered as a geographical indication in Turkey.
