What is Puzzone di Moena (Spretz Tzaorì)?
A bold washed-rind mountain cheese from the Fassa and Fiemme valleys of the South Tyrol Dolomites, made from raw cow’s milk. Wheels are washed weekly with salted water during ageing, creating an orange-tinted sticky rind and an exceptionally pungent, complex aroma. Aged for a minimum of 90 days. One of Italy’s most intensely aromatic cheeses.
Taste, aroma, and texture
Semi-hard, supple, and smooth, with a straw-yellow interior that may contain small, sparse eyes. The rind is moist, orange-tinted, and slightly sticky from weekly washing. Melts beautifully when heated and is widely used in local Trentino cooking.
Animal notes are strongly dominant, creating one of Italy’s most intense barnyard-scented profiles through weekly brine washing. Earthy notes are strongly present. Herbal and lactic notes are equally noticeable, while fruity notes remain faint. No smoky character.
