What is Mothais sur Feuille?

A soft raw goat’s milk cheese from the Deux-Sèvres and Vienne departments of Poitou, aged on a dried plane tree or chestnut leaf. The leaf absorbs excess moisture and imparts subtle earthy and woody notes during ripening. Wheels weigh 150–200 g and are aged on the leaf for a minimum of 11 days. A traditional Poitevin cheese with deep artisanal roots.

Taste, aroma, and texture

Smooth, soft, and moist beneath a thin wrinkled rind with natural blue-grey mould. The interior is compact and velvety, becoming more concentrated and creamy with extended ageing. The leaf on the base is an integral part of its visual identity.

Earthy notes are dominant, partly from contact with the leaf. Lactic and herbal notes are strongly present in equal measure. Animal notes are noticeable, while fruity notes remain faint. No smoky character.
