A blue-mould cheese from Erzurum, produced from Erzurum Civil, a stretched-curd cheese made from skimmed cow’s milk. The Civil cheese is separated into strands and loosely packed into earthenware vessels or cloth bags, allowing natural Penicillium mould to develop. The name Göğermiş means “turned blue” in Turkish. It is one of Turkey’s few native blue cheeses.

Taste, aroma, and texture

Fibrous and moist, with visible blue-green mould veins. With age, it becomes more brittle and crumbly. The separated Civil base gives it a stringy, open structure, unlike pressed blue cheeses.

Earthy notes are dominant; damp earth, forest floor, and wild mushroom character define the aroma. Animal and herbal notes are equally strongly present. Lactic and fruity notes are present. No smoky character.
