A large-format hard cheese from the Allgäu region, made from cow’s milk and known for its large round holes. Related in style to Swiss Emmentaler, but shaped by the milk and pasture conditions of southern Germany. Produced in large wheels and aged for several months.
Taste, aroma, and texture
Hard to semi-hard, smooth, and elastic. Large, round eyes are distributed through the pale yellow interior. Natural rind is firm and dry. Slices cleanly and melts evenly.
Lactic notes lead, with fruity and herbal notes clearly present. Earthy character remains subtle, while animal and smoky notes are barely perceptible. Clean and mild.
