What is Gouda?
One of the world’s most widely consumed cheeses: a semi-hard pressed cow’s milk cheese from the Netherlands, produced in flat cylindrical wheels. Gouda Holland PGI covers Dutch production across the country; Noord-Hollandse Gouda PDO is the stricter geographically defined variety from North Holland. Aged from 4 weeks for young versions to 36 months or more for extra-aged styles, with a dramatically different character at each stage.
Taste, aroma, and texture
Firm yet elastic when young, with a supple, compact body. Small round holes are distributed evenly. The natural rind is golden-yellow, often wax-coated in commercial versions. With extended ageing, it becomes progressively harder, drier, and more crystalline. Produced in flat cylindrical wheels of various sizes.
In young versions, lactic and fruity notes are equally dominant — clean, buttery, and slightly grassy. Earthy notes are noticeable, while animal and herbal notes remain faint. No smoky character. Complexity increases considerably with age, moving toward the aged Gouda profile.

Gouda has been traded in the city of Gouda since at least the 12th century, making it one of the oldest recorded Dutch trading cheeses. The Gouda cheese market, or waag, was a central institution of Dutch commerce for centuries. Noord-Hollandse Gouda has held PDO status since 1996; Gouda Holland has held PGI status since 2010.
