A blue cheese from Konya, also known as gök peynir, aged in sealed earthenware vessels. The anaerobic environment of the sealed clay pot develops blue-green mould without needle-piercing. Made from cow and/or sheep milk. One of Turkey’s most traditional blue cheese styles.
Taste, aroma, and texture
Semi-hard, moist, and crumbly, with vivid blue-green mould veins visible throughout. Sealed-pot ageing creates a compact, slightly waxy exterior without a true rind.
