What is Graviera Naxou?

The only Graviera PDO made primarily from cow’s milk, a rarity in Greek cheesemaking. Produced on the fertile island of Naxos in the Cyclades from cow’s milk, with up to 20% sheep’s or goat’s milk permitted. Aged for a minimum of 3 months, it develops a cream-to-golden natural rind. The mildest and most approachable of the three Graviera PDOs.

Taste, aroma, and texture

Dense and elastic, with a smooth, slightly supple interior and small round eyes distributed evenly through the paste. The rind is firm and ranges from cream to golden. The cow’s milk base gives it a rounder mouthfeel than Graviera Kritis.

Fruity notes are dominant, with toasted walnut and almond nuances. Lactic and herbal notes are equally noticeable. Earthy notes remain faint, while animal notes are barely perceptible. No smoky character. Significantly milder than sheep’s milk Graviera varieties.

Story and origin

Naxos is the most fertile island of the Cyclades, known for its rich agricultural land and cattle farming — unusual in Greece, where goat and sheep farming dominate. In the 19th century, local cheesemakers adapted the Graviera tradition to the island’s abundant cow’s milk supply. It has held PDO status since 1996.
