What is Graviera Agrafon?
A hard cheese from the remote Agrafa mountains of Western Thessaly, made from sheep’s milk or from a mixture containing up to 30% goat’s milk. The most assertive and complex of the three Greek Graviera PDOs. Aged for a minimum of 3 months, often longer, in the cool mountain air. Produced by small pastoral cooperatives following centuries-old traditions.
Taste, aroma, and texture
Compact and firm, with a straw-coloured interior and small, round, evenly distributed holes. Extended ageing brings a more pronounced crystalline structure than in other Graviera varieties. The rind is hard and golden-brown.
Fruity, lactic, earthy, and herbal notes are all equally prominent, creating a complex and balanced mountain bouquet. Animal notes remain faint. No smoky character. More assertive overall than Graviera Naxou.
