What is Aged Gouda?
An extended-aged version of Gouda, including Oud and Extra Oud styles, typically aged for 12–36 months or longer. It develops deep caramel sweetness, intense umami, and a crystalline, brittle structure. Noord-Hollandse Gouda PDO covers production in North Holland, while the broader Gouda Holland PGI covers wider Dutch production. Aged Gouda is among the most flavour-intense Dutch cheeses.
Taste, aroma, and texture
Hard and brittle, with pronounced white protein crystals throughout. The interior ranges from amber to deep golden. The natural rind is hard and dark. At very advanced ages, it fractures rather than slicing cleanly. Crystalline crunch is the hallmark of quality in aged Gouda.
Fruity notes are strongly dominant, with deep caramel, butterscotch, and roasted nut character. Earthy notes are strongly present. Lactic and animal notes are equally noticeable, while herbal notes remain faint. No smoky character. One of the most aromatic Dutch cheeses.
