What is Afuega'l Pitu?

One of Spain’s oldest and most geographically restricted cheeses, produced in central-western Asturias from whole pasteurised cow’s milk. It is made by natural acid coagulation, without rennet. Available in four forms: Trapu Blancu, Trapu Roxu, Atroncau Blancu, and Atroncau Roxu. The Roxu varieties are mixed with paprika before moulding, giving them a characteristic reddish-orange colour. Aged for 5–60 days.

Taste, aroma, and texture

Characteristically grainy, dry, and compact, with a well-known tendency to cling slightly to the palate and throat. The Roxu varieties are recognised by their reddish-orange exterior. No rind. White in the Blancu versions and reddish-orange in the Roxu versions. Becomes drier and firmer with extended ageing.

Lactic notes are strongly dominant; natural acid coagulation gives the cheese a clean, fresh fermented curd character. Earthy and animal notes are equally noticeable. Herbal notes are present. The Roxu varieties add a warm paprika dimension. Fruity and smoky notes are barely detectable.

Story and origin

With origins possibly dating back to the 8th century, Afuega'l Pitu is among Europe’s most ancient cheeses. Historically, it was valuable enough to be used as legal tender for paying taxes in Asturias. Its name in the Asturian dialect means “it chokes the throat,” referring to its dry, adherent texture. It has held PDO status since 2003.
