What is Van Otlu Peyniri?
A white brine cheese from Van and Hakkari, made predominantly from sheep milk, with fresh wild herbs collected each spring from the mountains around Lake Van mixed directly into the curd. The key herb is sirmo, a wild chive associated with the Van region, supported by local mountain thyme, mint, and other herbs. The herb mixture defines the cheese.
Taste, aroma, and texture
Crumbly and moist, with visible herb pieces and flecks throughout the white paste. No rind. The herb pieces are clearly visible in cross-section. Firm enough to slice.
Herbal notes are strongly dominant; sirmo’s wild-chive pungency and mountain thyme lead the profile over a clean fresh-milk base. Earthy and animal notes are present. Lactic notes are present. Fruity and smoky notes are faint.

Evliya Çelebi’s 17th-century Seyahatname mentions a herb-seasoned cheese from Van, among the early documented references to this tradition. The plant richness around Lake Van and the Hakkari mountains shaped a strongly herbal dairy tradition. The protected designation preserves the herb-mixing practice and the defined production zone. Registered in Turkey and the EU as a geographical indication.
Storage and serving
- Store in the fridge, sealed or in an airtight container.
- Air travel: not ideal; suitable only if sealed and kept cool.
