A brined cheese from Cyprus, made from sheep, goat, and/or cow milk. The curd is heated in whey, folded, salted, and often stored in brine with mint. Its high melting point makes it suitable for grilling or frying without losing shape.
Taste, aroma, and texture
Firm, elastic, and layered, with a squeaky bite. White to pale ivory. No true rind. Holds its shape when grilled or fried. The folded structure is visible in cross-section.
Lactic notes are dominant, with notable herbal notes from the dried mint folded into the cheese. Fruity, earthy, smoky, and animal notes remain faint. When grilled, the smoky and lactic notes intensify noticeably.
