What is Valençay?

A distinctive truncated-pyramid raw goat’s milk cheese from the Berry region, dusted with fine wood ash. Weighing 220–260 g, it is aged for a minimum of 11 days. Its flat-topped pyramid shape distinguishes it from the pointed Pouligny-Saint-Pierre. A well-known legend links the shape to Napoleon, who reportedly cut the top off a pyramid-shaped cheese presented to him by Talleyrand after his failed Egyptian campaign.

Taste, aroma, and texture

Firm, moist, and bright white beneath the charcoal-ash rind. The interior is smooth, homogeneous, and velvety, melting easily on the palate. The truncated pyramid shape with its flat top is the key visual identifier. Becomes drier and more concentrated with extended ageing.
