What is Slovenská parenica?
One of Slovakia’s most iconic cheeses: a steamed stretched-curd cheese made by pulling heated cheese into long ribbons, which are then rolled into a distinctive spiral or scroll shape. Made from pasteurised cow’s milk or sheep’s milk. Available natural or smoked over beech wood.
Taste, aroma, and texture
Fibrous, elastic, and multi-layered from the stretching process. Its defining feature is the stringy structure, which allows it to be unwound from the spiral roll and eaten in strips. Pale white in natural versions, golden-brown in smoked versions. Soft and slightly chewy.
In smoked versions, smoky notes are dominant, led by beech wood smoke. Lactic notes are present beneath. In natural versions, lactic notes lead. Fruity, earthy, animal, and herbal notes remain faint in both versions.
