What is Redykołka?
Known as the “little sister” of Oscypek, Redykołka is a small smoked sheep’s milk cheese from the Podhale region, traditionally shaped into decorative figures such as animals, hearts, and stars. Produced exclusively by highland shepherds during the summer grazing season. It received PDO status alongside Oscypek.
Taste, aroma, and texture
Smooth, firm, and slightly elastic, with a characteristic squeaky bite. The decorative animal, heart, or star shapes are the defining visual feature. Golden-brown smoked exterior and ivory interior. Smaller than Oscypek, typically weighing 100–250 g.
Smoky notes are dominant, shaped by the traditional wood-smoking process. Animal notes from the sheep’s milk are strongly present. Earthy and herbal notes are equally noticeable. Lactic and fruity notes remain faint.
