What is Oscypek?

The most iconic symbol of Polish highland culture: a traditional smoked cheese made from at least 60% salted sheep’s milk, hand-pressed into spindle-shaped forms using ornate carved wooden moulds. Produced exclusively in the Podhale region between May and September. Aged for 14–25 days, then cold-smoked over beech and pine wood.

Taste, aroma, and texture

Hard, elastic, and dense, with a characteristic squeaky feel when bitten. The smoked exterior is golden-brown and bears decorative carved patterns from the wooden mould. The interior ranges from ivory to pale yellow. The spindle shape with ornate carved decoration is immediately recognisable.

Smoky notes are strongly dominant, led by beech and pine wood smoke. Animal notes from the sheep’s milk are strongly present. Earthy and herbal notes are equally noticeable, reflecting the mountain pastures. Lactic and fruity notes remain faint.

Story and origin

Written records of cheesemaking in the Tatra Mountains date back to at least 1416, though the specific Oscypek recipe has been closely guarded by highland shepherds for generations.
