What is Nostrano Valtrompia?
A hard alpine cheese from the Trompia Valley of Brescia in Lombardy, made from semi-skimmed raw milk from Bruna Alpina cows. Its most distinctive feature is the addition of saffron during production, which gives the cheese a golden hue and adds to its flavour complexity. Aged for a minimum of 12 months.
Taste, aroma, and texture
Extra-hard, compact, and smooth, with a dense amber-golden interior coloured by saffron. Fine flavour crystals may develop at peak maturity. The natural rind is hard and dark. Excellent for grating. Wheels weigh approximately 8–18 kg.
Saffron leads the herbal dimension, making it unique among Italian PDO cheeses. Lactic, fruity, and herbal notes are strongly present, alongside pronounced earthy notes. Animal notes remain faint. No smoky character. A truly distinctive aromatic profile.
