What is Monte Veronese?

An alpine cheese from the Lessinia highlands north of Verona, made from cow’s milk in two styles: Latte Intero, made from whole milk and aged 25–60 days, is creamy and sweet; D’Allevo, made from skimmed milk and aged up to 2 years, is harder and more complex. For centuries, it was known as the “mountain cheese” of Verona’s markets.

Taste, aroma, and texture

Latte Intero: supple, smooth, and slightly moist, with small scattered holes. D’Allevo: hard, compact, and slightly porous, becoming increasingly crumbly with age. The natural rind develops from pale golden to dark brown. Wheels weigh 7–10 kg.

Lactic and herbal notes are equally dominant. Fruity and earthy notes are equally noticeable, while animal notes remain faint. No smoky character. Latte Intero is mild and butter-forward; D’Allevo develops alpine herb, hay, and spicy complexity.
