What is Dovedale?
A delicate English blue cheese from the Dove Valley in the Peak District, produced exclusively using milk from within the Peak District National Park. Made from full-fat pasteurised cow’s milk in small cylinders of approximately 4 kg. Aged for a minimum of 4 weeks. Milder and creamier than Stilton.
Taste, aroma, and texture
Semi-soft, moist, and silky, melting faster on the palate than many blue cheeses. Slight characteristic crumble typical of blue cheeses. Ivory interior with blue-green veining. Natural rind is thin and slightly rough. Cylinders weigh approximately 4 kg.
Earthy notes are dominant: damp cave and blue mould character. Animal notes are strongly present. Lactic notes are notable. Fruity notes are present. Herbal and smoky notes are barely detectable. Gentler than Stilton or Cabrales.
