What is Telemea?
Romania’s most iconic traditional brined white cheese, produced across multiple Romanian regions from cow’s, sheep’s, goat’s, or buffalo milk, with each region bringing its own local character. Ripened in brine for a minimum of 20 days. Firm, moist, and sliceable. Several regional varieties hold PDO status, including Telemea de Ibăneşti and Telemea de Sibiu. Similar in style to Bulgarian Sirene and Greek Feta, but with a distinctly Romanian identity.
Taste, aroma, and texture
Semi-soft, smooth, and uniform; sliceable, though some varieties may be slightly crumbly. Small fermentation eyes may appear. Pure white throughout, stored and served in brine. Firmer sheep’s milk varieties hold their shape better, while softer cow’s milk versions are more supple.
Lactic notes are strongly dominant — fresh, clean, and tangy from brine maturation. Animal notes are present; sheep’s milk varieties often carry a noticeable lanolin note. Earthy and herbal notes remain faint, while fruity and smoky notes are barely perceptible.
