What is Queijo Serra da Estrela?
Widely regarded as the King of Portuguese Cheeses, this is Portugal’s oldest and most prestigious cheese. It is hand-crafted from the raw milk of Bordaleira Serra da Estrela and Churra Mondegueira sheep, coagulated exclusively with an infusion of wild thistle. Produced in the Serra da Estrela mountains, Portugal’s highest mountain range. Its prized amanteigado state, where the interior becomes fully fluid and buttery, is the benchmark of quality. Aged for a minimum of 30 days.
Taste, aroma, and texture
Extraordinarily creamy, buttery, and smooth in its amanteigado state; the interior becomes fully fluid and flows freely when the top rind is removed. The thin rind is firm enough to hold the paste. At younger stages, the interior is semi-liquid and spreadable. Wheels weigh 500 g–1.7 kg.
Herbal notes are strongly dominant; wild thistle rennet gives the cheese an intense, persistent floral and vegetal character. Animal and earthy notes are equally strong, shaped by sheep’s milk and high-altitude pastures. Lactic notes are noticeable, while fruity notes remain faint. No smoky character.
